Famous rock oolongs—also called yancha (岩茶), meaning “rock tea”—come from the Wuyi Mountains (武夷山) in northern Fujian, China. These teas are known for their rich, roasted flavors and a distinct minerality referred to as “yan yun” (岩韻) or “rock rhyme.”
