Iron Goddess of Mercy

Iron Goddess (Tie Guan Yin) is a famous type of oolong tea that refers both to a specific cultivar and a processing method. Traditionally, the "Red Heart" cultivar is used to produce this tea. Historically, Iron Goddess oolong was more heavily oxidized and roasted, resulting in a rich, full-bodied tea with flavors reminiscent of stone fruit, earth, wood, and fruit sugars.

In the last 20 years, greener, more delicate versions of Iron Goddess have emerged, particularly from Anxi, China. These modern varieties offer a more floral and fragrant profile, making them a lighter, more refreshing option compared to the traditional roasted style.
